Pumpkin Spice Latte :)

My latest obsession has been searching the internet high and low looking for pumpkin recipes!

I already have a KILLER pumpkin pie recipe (thanks Mom!), and those amazing pumpkin spice oatmeal cookies I posted a few days ago, but today I get to share my favourite!!!!

Thanks to one of my favourite food blogs “Back to her Roots“, I now have a better than Starbucks Pumpkin Spice Latte! (okay maybe not better than Starbucks, but pretty darn close!)

I tried it this morning, and definitly drank the entire batch (which according to her serves 2-3…..not sure how big her coffee mugs are, but it only served me my regular 2 cups of coffee!)

ENJOY! :)

 

Pumpkin Spice Latte

2 cups skim milk

1/4 cup pumpkin puree

2 tbsp maple syrup

2 tbsp vanilla (no that’s not a typo…trust me it works!)

1/4 tsp pumplin spice

pinch of cayenne pepper (trust me on this one too!)

2/3 cup espresso

Sugar to taste…I like my drinks sweeter than the normal person, so add sugar until it’s sweet enough for you :)

Mix together and enjoy! Keep stirring it as you drink as the pumpkin can sink to the bottom. I tried pushing the pumpkin through a sieve into the glass and that helped TONS!! it was a bit too grainy before!

Today I am heading up to IGA for some EGG NOG! :)

    I love pumpkin spice lattes! This recipe is similar to mine, but mine has no syrup or cayenne. To get rid of the grainy texture I whip mine up in a blender before I heat it in a saucepan on the stove. I guess I could microwave it too. :) As an added bonus, it’s nice and frothy!
